When imagining his restaurant, the chef wanted three things: to respect the seasons so as to appreciate the genuine taste of each product, to highlight the region by choosing producers within a 200 km radius and by proposing fresh fish bought at the fish market in Ciboure, in the Basque Country. So, carpaccio of sea bream is to be found alongside lamb from the Pyrénées in a light, gourmet cuisine. All this is served with wine coming from different regions having been the object of a really thorough search. You can enjoy the view of the hamlet and the surrounding mountains from the sunny terrace.
